Designed by Michaelis Boyd, Tom’s Kitchen in St Katherine’s Dock is more industrial and raw- looking than the other branches – some call it rather more cool. 

Designed by Michaelis Boyd, Tom’s Kitchen in St Katherine’s Dock is more industrial and raw- looking than the other branches – some call it rather more cool. In fact it’s a mix of classic brasserie and modern industrial styling, with leather banquettes and huge tables, exposed pipework and ceilings with hanging single-bulb lights, bare bricks and lots and lots of lovely reclaimed oak.

120mm wide unfinished solid oak planks were chosen for the floors, with the same wood in a 180mm plank for selected vertical areas. Traditionally, the specification of solid reclaimed timber in a commercial project is fraught with difficulties, both in consistency of supply and dimensions. which can make installation a long and costly process, but Havwoods’ solid oak is entirely different. 

Huge structural timbers are reclaimed from old buildings in the Maramures region of Transylvania and milled by local craftsmen using modern tools and techniques, ensuring the best of both worlds: a consistent plank, but one with the charm of mellow old timber with a story.
